Ingredients:

  • 1 cup persimmon pulp
  • 1 cup sugar
  • 1 egg
  • 1 cup milk
  • 1 cup flour
  • 1/2 tsp cinnamon
  • 1/2 cup raisins
  • 1/2 tsp salt
  • 1/4 cup chopped dates
  • 1 cup water
  • 2 tbsp flour
  • 1 pinch salt

Directions:

  1. Mix sugar, pulp, egg, butter and milk in a bowl.
  2. Separately mix all dry ingredients.
  3. Dust raisins and dates with flour so they won't sink to the bottom of the pan when baking.
  4. Gradually add the pulp mixture into the flour mixture, added the floured dates and raisins last.
  5. Pour into a 9x13 pan and bake in 325 oven for 45 to 60 minutes or until tester comes out clean in middle.
  6. For the sauce, combine all ingredients in a sauce pan and cook over low heat until thickened.
  7. Serve over squares of pudding.
