  1. Preheat over to 450 degrees.
  2. Heat the olive oil in a heavy skillit - I use cast iron. When it's real hot toss in the pecans and stir them till they start to brown - about 5-7 min. Remove to paper towels to cool a bit then chop them up.**
  3. In a large bowl, combine baking mix and pecans. Add cream and stir until a soft dough forms. On a lightly floured surface, use a floured rolling pin to roll out dough to 1/2 inch thickness. Use a floured ( or bisquick) 2-inch biscuit cutter to cut out dough. Place on greased baking sheet and brush tops with butter. Bake 7-10 minutes or until light brown.
  4. **I usually do very large batches of these pecans and store them in the fridge in a plastic container. I put them in EVERYTHING from my cereal in the morning to my salad at night. = )
