Pearl Onion Tapas

Ingredients:

  • 1 lb small pearl onions or 1 lb shallot
  • 6 tbsp olive oil
  • 7 oz shery vinegar
  • 3 -4 oz sherry wine
  • 2 fresh thyme sprigs
  • 1 tsp sugar

Directions:

  1. Peel the pearl onion.
  2. Put the oil in a saute pan. Heat over med heat and add the onion. Saute until light golden color.
  3. Sprinkle sugar over onions and caramelize for about a minute.
  4. Pour in sherry vinegar and sherry. Add thyme twigs, salt and pepper to taste.
  5. Cover and simmer 30 minutes.
  6. Cool and then serve in small bowls.
