  1. Arrange 6 english muffin halves, cut side up in a greased 9x13 baking dish. Fill in spaces with pieces of remaining 2 muffin halves. Sprinkle with 1 cup cheese, ham and red pepper. In bowl whisk eggs, milk, salt, mustard and pepper; pour over muffins. Cover and refrigerate overnight.
  2. Remove from fridge 30 min before baking. Sprinkle with remaining 1 cup cheese. Bake uncovered 375 degrees for 40-45 min or until knife inserted near the edge comes out clean. Let stand 5 min before cutting.
