Overnight Ham and Red Pepper Strata |

This came from our local newspaper and sounded too good not to post - I have never made a strata with English Muffins but I bet its tasty. Ingredients:
2 cups colby monterey jack cheese, shredded |
1 cup cooked ham, diced |
1/2 cup red bell pepper, chopped |
8 eggs |
2 cups milk |
1 teaspoon salt |
1 teaspoon ground mustard |
Directions:
1. Arrange 6 english muffin halves, cut side up in a greased 9x13 baking dish. Fill in spaces with pieces of remaining 2 muffin halves. Sprinkle with 1 cup cheese, ham and red pepper. In bowl whisk eggs, milk, salt, mustard and pepper; pour over muffins. Cover and refrigerate overnight. 2. Remove from fridge 30 min before baking. Sprinkle with remaining 1 cup cheese. Bake uncovered 375 degrees for 40-45 min or until knife inserted near the edge comes out clean. Let stand 5 min before cutting. |
