Oatmeal Maple And Pecan Muffins

Ingredients:

Directions:

  1. Lightly spray OR paper-line muffin cups.
  2. Preheat oven to 375 degrees F.
  3. Blend together the oats, flour, baking powder, pecans and dates in a bowl.
  4. In a medium bowl, beat together the eggs, syrup, water and oil until smooth.
  5. Combine the wet and dry ingredients until just moistened.
  6. Spoon batter into prepared pans, filling no more than 3/4 full.
  7. Bake for 15 to 20 minutes OR until cakes test done.
  8. Remove from oven.
  9. Cool in the pan on a wire rack for 5 to 7 minutes.
  10. Serve warm OR invert onto rack and allow to cool completely.
