Ingredients:

Directions:

  1. Heat oil in a large high-sided saucepan.
  2. Add onion and cook until soft.
  3. Add garlic and cook for 30 seconds.
  4. Add mushrooms and cook for a few minutes.
  5. Add tomato paste and cook for 30 seconds.
  6. Add wine and cook until reduced.
  7. Add tinned tomatoes, bay leaf and oregano.
  8. Season and cook for 8-10 minutes or until rich and thick.
  9. Stir through pasrsley and serve with spaghetti and parmesan.
