Mom's Caramel Corn

Ingredients:

  • 1 cup butter or 1 cup margarine
  • 2 cups brown sugar , firmly packed
  • 1/2 cup corn syrup
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • 6 quarts popped popcorn

Directions:

  1. Preheat oven to 250°F.
  2. Melt butter and stir in sugar, syrup and salt.
  3. Bring to a boil, stirring constantly.
  4. When boiling, continue to boil without stirring for 5 minutes.
  5. Remove from heat and stir in baking soda & vanilla. (Careful: this will foam up!).
  6. Place popped corn in 2 9 x 13 pans. Gradually pour caramel mixture over popped corn. Stir to coat.
  7. Bake at 250F for 1 hour, stirring every 15 minutes.
