I love caramel corn and think this is the best I've ever had! Ingredients:
1 cup butter or 1 cup margarine |
2 cups brown sugar, firmly packed |
1/2 cup corn syrup |
1 teaspoon salt |
1/2 teaspoon baking soda |
1 teaspoon vanilla |
6 quarts popped popcorn |
Directions:
1. Preheat oven to 250°F. 2. Melt butter and stir in sugar, syrup and salt. 3. Bring to a boil, stirring constantly. 4. When boiling, continue to boil without stirring for 5 minutes. 5. Remove from heat and stir in baking soda & vanilla. (Careful: this will foam up!). 6. Place popped corn in 2 9 x 13 pans. Gradually pour caramel mixture over popped corn. Stir to coat. 7. Bake at 250F for 1 hour, stirring every 15 minutes. |
