  1. Combine cornmeal, flour, baking powder, sugar, and salt; add milk, shortening, and egg, mixing well. Stir in bacon.
  2. Pour batter into a well-greased 8-inch square pan. Bake at 425° for 25 minutes or until lightly browned. Cut into squares, and serve with Creole Celery Sauce.
