Microwave Orange Coffee Crumb Cake

Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup butter
  • 2 tsp cinnamon
  • 2 eggs

Directions:

  1. Blend flour, sugar and butter until cornmeal consistency.
  2. Combine 1 cup of crumb mixture with cinnamon; reserve for topping.
  3. Add baking powder to remaining mixture; blend well.
  4. Beat eggs with orange juice.
  5. Mix lightly into crumb mixture.
  6. Pour into lightly greased 9 square microwave-safe baking dish.
  7. Sprinkle top with cinnamon crumbs.
  8. Microwave on HIGH for 8 minutes, rotating half way during cooking.
