Mackinaw Island Banana Bread

Ingredients:

  • 1/2 cup shortening
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 4 medium mashed bananas
  • 4 tbsp buttermilk or 4 tbsp sour milk
  • 3 cups flour
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1/2 cup chopped walnuts or 1/2 cup pecans

Directions:

  1. Preheat oven to 350 degrees.
  2. Cream sugar and shortening.
  3. Add eggs and mix well.
  4. In separate bowl mix milk with bananas and set aside.
  5. Mix together flour, salt and soda - add alternately with banana mixture, mixing well after each addition.
  6. Add vanilla and nuts.
  7. Pour into greased loaf pans (Usually enough for one large and one mini-loaf pan.)
  8. Bake for 45-50 minutes until toothpick inserted in center comes out clean.
