Yummy veggie lentil soup as a great snack or a meal! Use a 796 ml can of diced tomatoes instead of fresh - I calculated what was needed for the recipe's calories. Also, I use a 540 ml can of green lentils instead of raw - again, I adjusted the measurements to be a proper caloric count. Ingredients:
2 tsp olive oil |
3/4 cups onion |
1 1/4 cups celery |
1 3/4 cups zucchini |
2 cups carrots |
3 cups cabbage |
7 cups water |
6 cups tomatoes |
1/2 cup lentils (raw) |
Directions:
1. saute onions, celery, zucchini & carrots in olive oil for about 5 minutes 2. drain canned lentils and add to pot 3. add entire can of diced tomatoes 4. add water and bring to a boil 5. turn down heat and simmer for 20 minutes 6. add cabbage (a little more water if needed) and continue simmering until cabbage is tender - approx. 45 minutes more |
