Lemon Poppy Seed Oatmeal Muffins

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup oats
  • 2/3 cup sugar
  • 1/2 tsp baking soda
  • 3/4 cup milk
  • 1/4 cup oil
  • 1 egg
  • 1 tbsp lemon juice
  • streusel (optional)
  • 1 tbsp sugar
  • 1 tbsp butter
  • 1/4 cup oats

Directions:

  1. Heat oven to 400 degrees
  2. Line muffin tin with baking cups or lightly grease bottoms only.
  3. Mix streusel mixture and set aside
  4. Combine dry muffin ingredients and mix well.
  5. Add liquids and mix just until dry ingrediets are moist.
  6. Fill muffin cups.
  7. Sprinkle streusel over muffins and pat gently
  8. Bake 18-20 minutes
