Ingredients:

  • 1/4 cup. heavy cream
  • 1/4 cup. butter
  • 1/2 tbsp. salt

Directions:

  1. Mix potatoes, cream, butter, and salt in a large bowl. Cool
  2. Completely.
  3. Mix in 1/2 of the flour and form into 2 logs and refrigerate for at least 2 hours. I usually refrigerate overnight.
  4. Cut logs into 6-8 pieces.
  5. Using a pastry cloth, take the other half of the flour and use a little to cover the cloth. Take one section of log and roll flat with straight-groove rolling pin, flipping over every time you roll, and adding more flour as needed.
  6. When thin enough, finish each side of the lefse with a checkered-groove rolling pin.
  7. Use lefse turner to put on preheated lefse griddle (500º F). Turn when it bubbles and browns.
  8. Remove and lay on flour sack towel and cover. Pile up all, then roll up in a towel until cool.
  9. Store in plastic bag so they won't dry out.
