Ingredients:

Directions:

  1. Add butter and rinds to a heavy skillet and melt over low heat, stirring well.
  2. Add some of the sugar and stir until the mixture is smooth.
  3. Add juices and continue cooking. Add the remaining sugar and cook until it melts and blends with the other ingredients.
  4. Add rum a little at a time and bring to a slow boil. Peel the bananas and poach in the sauce turning frequently.
  5. Cook about 5 minutes until they are tender but not mushy.
