Italian Bean Salad

Ingredients:

Directions:

  1. Mix in a bowl:
  2. Cans cannellini beans, drained and rinsed
  3. /2 cup diced celery (I put more in and like it better that way)
  4. /2 cup green onions
  5. Mix and pour over beans:
  6. Cup olive oil
  7. T red wine vinegar
  8. T fresh parsley (I add a little bit more than this)
  9. Tsp chopped garlic
  10. Salt and pepper (I am fairly generous with the salt)
