Indonesian Spicy Coconut Soup Aka Sayur Lodeh

Ingredients:

  • 1 cup green papaya sliced jullianne ( or zuccini or yellow squash or even potatoes)
  • 1 cup carrot sliced jullianne
  • 1/4 cup tempeh cubed
  • 1 cup of sweet corn
  • spiced ingredient
  • 1 lemon grass (bruised)
  • 5 bayleaf (or indian bayleaf better aka daun salam)
  • 2 tbsp galanggal powder ( it is important but if you can'tsp find it , no problem)
  • 2 tbsp dried shrimp powder ( look in the mexican supermarket)
  • 2-3 cup water
  • salt , sugar chicken boulian to taste
  • 2 tbsp oil to saute
  • 1 cup of slice omelet ( egg+ salt+ pepper)

Directions:

  1. Masukan minyak kedalam panci masukan bumbu dasar merah, tumis hingga harum. masukan udang,tomat yang di iris, daun salam, serai,ebi, lengkuas bubuk. Lalu masukan sayur sayuran beserta tempe, tumis hingga layu. masukan santan air lalu bumbuin dengan garam, micin, gula. masak hingga mendidih lalu kecilkan api , masak hingga matang .
  2. Heat the pot , add some oil
  3. Add the basic red chilli paste for Indonesian cooking saute until brownish and smell wonderfull
  4. Add shrimp, tomatoes, lemon grass, bayleaf, dried shrimp, galanggal powder.
  5. Add the vegetables and tempeh
  6. Stir for a minute
  7. Add coconut milk and water
  8. Season to taste and also the boulian
  9. Reduce the heat and shimmer for 10 min
  10. Serve with boiled potatoes
  11. And sliced omelet (optional)
