Directions:

  1. Preheat oven to 375 degrees F. Grease a 9x5 loaf pan with cooking spray.
  2. Scoop flesh from sweet potatoes into a large bowl and discard skins. Smash sweet potatoes and mix in all remaining ingredients.
  3. Pour mixture into prepared loaf pan. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
