Ingredients:

  • 2 eggs
  • 1 cup of milk
  • 1/2 tsp vanilla
  • 2 to 3 tbsp sugar for berries
  • 12 medium- sized berries
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup sugar

Directions:

  1. Assemble mix in medium bowl and melt butter
  2. Preheat oven to 375 degrees F. put muffin papers in baking pan
  3. Break eggs into other bowl
  4. Add milk,vanilla and melted butter and whisk 20 times
  5. Pour milk mixture into flour mixture. mix with spoon until flour is all mixed in
  6. Use a 1/4 cup measure with a handle to fill the muffin papers halfway
  7. Roll each berry in sugar and put 1 in the center of each muffin with your finger
  8. Bake 15-20 min. or until a toothpick comes out clean.let cool at least 10 min.
