Ingredients:

Directions:

  1. In a bowl, cream together teh gruyere and butter.
  2. Sift the salt cayenne and flour into another bowl, then gradually add the cheese mixture, then nuts and mix well with hands to form a dough.
  3. Divide the dough into 2 and shape into logs, 4cm ( 1 1/2 inch) in diameter.
  4. Wrap in plastic wrap and chill1 hour.
  5. Preheat oven to 180°C.
  6. With a sharp knife cut ito 5mm ( 1/4 inch) thick slices. Lay on a baking sheet lined with baking paper.
  7. Bake 15-20 minutes until lightly brown. transfer to a wire rack to cool, then Store in an airtight container.
