Gluten Free Sweet Potato Muffins

Ingredients:

  • 2 medium sweet potatoes
  • 2 eggs (i use 3 tsp. of egg replacer tbsp. water)
  • 4 tbsp water
  • 1/2 cup brown sugar
  • 1/2 tsp vanilla

Directions:

  1. Peel and boil the potatoes. When cooked, mash them and mix in remaining ingredients.
  2. Pour into muffins tins (this recipe makes twelve muffins). Sprinkle top with cinnamon.
  3. Bake on 350 degrees for 20-25 minutes.
