Ingredients:

  • 2 1/3 cups baking mix
  • 1/4 cup canola oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup soymilk

Directions:

  1. Preheat oven to 400.
  2. Grease 12 muffin pan.
  3. Mix all ingredients & beat until smooth.
  4. Bake for 25-35 minutes.
