Ingredients:

  • 2 lb of stew meat
  • 4 cups of boiling water
  • 1/2 cup of diced onion
  • 2 medium potatoes, cubed
  • 1 heaping cup of chopped carrots
  • 1 cup of fresh or frozen peas
  • 1 cup of fresh or frozen corn
  • salt and pepper to taste
  • 1/2 cup cold water
  • 3 tbsp cornstarch

Directions:

  1. Turn your slow cooker to high.
  2. Add 2 beef flavored bouillon cubes and 4 cups of boiling water.
  3. Dissolve the bouillon cubes in the boiling water.
  4. Add the stew meat, vegetables, and stir.
  5. Tuck the bay leaves in different places in the stew. If you stir them in, be careful not to break the leaves. You will remove them later.
  6. Place the lid on the slow cooker and stir every 1-2 hours.
  7. After the 6 hours is up, remove the bay leaves.
  8. In a small bowl, or cup mix cornstarch with cold water.
  9. Stir in the cornstarch mixture. This will thicken the stew.
  10. Once thickened, spoon stew into bowls and serve. This is great with a slice of bread with margarine.
  11. This meal can be made the night before and plugged in before work the next morning. Just cook it on low all day, and it will be ready by dinner time.
