Flounder with Corn Salsa and Quinoa Side

Ingredients:

Directions:

  1. Sauté onion and garlic, add cilantro diced tomatoes, diced jalapeño, and corn. Simmer for 5 minutes.
  2. Spread on top of flounder, cook in oven at 350-400 degrees for 12-15 minutes (until fish flakes with a fork).
  3. While fish is cooking. Bring chicken stock to a boil and add quinoa. Cook until liquid is absorbed and quinoa's rings show.
