Ingredients:

  • 1 (10 oz) package couscous
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1/3 cup finely chopped green olives

Directions:

  1. Start to cook couscous according to package directions.
  2. Meanwhile, combine flour and salt in 9-inch pie plate.
  3. Coat fish on both sides.
  4. Heat oil in skillet for 2 minutes over medium-high heat.
  5. Add fish and cook 3-4 minutes per side, until browned.
  6. Add salsa and olives to pan.
  7. Cook 5-7 minutes more, spooning salsa occasionally over fish, until it flakes easily with fork.
  8. Fluff couscous with a fork and serve with fish.
