Ingredients:

Directions:

  1. In a large bowl, combine the first 11 ingredients.
  2. Crumble beef over mixture and mix well.
  3. On a piece of heavy-duty foil, pat beef mixture into a 17 inches x 15-in. rectangle.
  4. Cover with ham and cheese slices to within 1/2. of edges.
  5. Roll up tightly jelly-roll style, starting with a short side.
  6. Place seam side down in a roasting pan.
  7. Bake, uncovered, at 350°F for 1-1/4 to 1-1/2 hours or until a meat thermometer reads 160 degrees.
  8. In a saucepan, sauté the onion, celery, green pepper and garlic in oil for 3-5 minutes or until tender.
  9. Add tomatoes, broth, bay leaf, sugar salt and thyme.
  10. Simmer, uncovered, for 30 minutes.
  11. Discard bay leaf.
  12. Combine cornstarch and water until smooth; stir into sauce.
  13. Bring to a boil; cook and stir for 2 minutes or until thickened.
  14. Drain meatloaf; top with sauce.
