Farmgirl's Funky Chicken

Ingredients:

  • 4 lbs chicken
  • 1 (12 oz) jar pepper relish
  • 2 tsp salt
  • 1 tbsp oil

Directions:

  1. Preheat oven to 450.
  2. Wash and dry chicken.
  3. Rub inside and out of chicken with salt, pepper and oil.
  4. Rub inside and out of chicken with pepper relish.
  5. Cut lemon in half and place in cavity.
  6. Separate skin from chicken by gently pulling apart and rub relish in between the layers.
  7. Replace skin to seal in juices.
  8. Roast chicken on rack at 450 for 1 hour 20 mins, uncovered.
  9. Remove chicken and let sit, uncovered, for at least 30 mins.
  10. Carve and serve.
