Ingredients:

  • 1 lb of carrots, sliced thin
  • 1/4 cup of raisins
  • 1/4 cup butter
  • 1/8 cup honey
  • 1/4 tsp ginger

Directions:

  1. Preheat oven to 375 degrees
  2. Cook carrots, covered in 1/2 inch boiling water for 8 minutes
  3. Drain
  4. Pour carrots into 1 quart baking dish and add raisins, butter, honey,
  5. Lemon juice and ginger
  6. Bake uncovered for 35 minutes, stirring occasionally
  7. Sprinkle with almonds and serve
