Ingredients:

  1. Place a mesh strainer in a large non-glass bowl set in an ice water bath. Set aside.
  2. In a medium saucepan, off heat, stir together sugar, cornstarch and spices. Whisk in 4 cups cold milk, being sure to dissolve cornstarch. Whisk in egg yolks.
  3. Over medium heat, whisk constantly until large bubbles start to form, 10-12 minutes. Reduce heat to low and cook 1 minute more, still whisking constantly.
  4. Remove from heat and pour through sieve into bowl. Whisk in remaining cold milk. Allow to remain in ice bath until fully cold.
  5. Stir in brandy just before serving. Serve in martini glasses garnished with a pinch of pumpkin pie spice.
