Directions:

  1. Heat olive oil in a non-stick skillet at medium high heat and saute onions and peppers for three to four minutes.
  2. Whisk egg whites lightly with black pepper and pour on top of veggies.
  3. Cook until partially set; top with cheese and fold over in half.
  4. Cook for about one more minute until done and serve.
