Egg-Free Chocolate Chip Banana Bread

Ingredients:

  • 1/4 cup margarine
  • 1 cup sugar
  • 1/4 cup applesauce
  • 5 tbsp buttermilk
  • 1 cup banana, mashed (about 3)
  • 1 tsp vanilla
  • 2 cups flour
  • 1/2 tsp salt

Directions:

  1. Cream margarine and sugar.
  2. Add applesauce, buttermilk, mashed bananas and vanilla and mix well.
  3. Combine flour, baking soda, and salt.
  4. Add flour mixture to banana mixture and mix until combined (will be lumpy).
  5. Stir in chocolate chips.
  6. Spoon into greased loaf pan.
  7. Bake at 350F for 60 minutes.
