Easy Baked Chicken Leg Quarters And Gravy

Ingredients:

  • 1 (12 0z) jar of heinz home style chicken gravy
  • 1/2 jar of water
  • 1 tbsp of olive oil
  • 1 tbsp of butter or margarine
  • 1 tbsp of cajun seasoning
  • 1 tbsp paprika
  • 1 (4 oz) can of sliced mushrooms (optional)

Directions:

  1. Wash and pat dry the leg quarters.
  2. Sprinkle the Cajun seasoning and paprika on both sides of the leg quarters.
  3. In a non stick skillet, heat the olive oil and butter on medium heat.
  4. Brown the leg quarters for 2 minutes on each side then place on paper towels to absorb the excess grease.
  5. Preheat oven to 325 deg.F
  6. Mix gravy and water in a bowl.
  7. Cover the bottom of an 8X8 Pyrex dish with some of the gravy.
  8. Place in the leg quarters skin side up.
  9. Pour the rest of the gravy over the leg quarters.
  10. Place the dish into the oven.
  11. After 45 minutes, remove and mix the gravy and baste the leg quarters with the gravy. Note; if using mushrooms, add them now and mix in the gravy.
  12. Cook for another 30 minutes.
  13. Remove from oven, cover with foil and let rest for 10 minutes.
  14. Serve over rice or mashed potatoes.
