  1. Preheat oven to 375 degrees. Slice pears in half, lengthwise and remove the seeds and most of the center, using a spoon. The idea here is to make a hole for the ï¿1/2stuffingï¿1/2, but be careful not to break through to the other side, or bruise the pear. Place pears skin side down in a greased, shallow baking dish (use a pat of the softened butter), and squeeze the juice of one half of the orange over each pear slice liberally. In a bowl, toss nuts in with the softened butter, ground ginger, cinnamon, nutmeg and ground cloves, until well combined. 'Stuff' each pear half with spice nut mixture; place in oven and bake for 30 minutes; remove from oven, and drizzle the juice of the other half of orange or clementine over the pears halfway thru the baking process. Bake for an additional 30 minutes until brown, bubbly and fragrant. For the Raspberry Gel: In a small saucepan, add 1/2 cup water and bring to a boil. Grate in the rind of the orange, and add the raspberries. Reduce flame to medium low and heat mixture for about 30 minutes, stirring often to break up the berries. The 'gel' is done when the consistency is that of a thick syrup, or jelly. Remove from heal, and squeeze the juice of the orange into the raspberry gel, while still hot, and stir in to mix well. Remove pears from oven and drizzle with the warm Raspberry Gel. Serve warm and enjoy!
