Ingredients:

  • bhindi ki subji (curried okra)
  • 4
  • 2 tblsp vegetable oil (may use olive oil)
  • 2 tsp. curry powder
  • 1/2 tsp. ginger
  • 1/2 tsp. paprika
  • 1 lb. small
  • 1 large
  • 2 medium
  • cover and simmer until potatoes are done.
  • add salt to taste only after the dish is completed.
  • (no water is used in this dish.)
