Creamed Asparagus and Mushrooms

Ingredients:

  • 1 lb asparagus
  • 1/4 cup butter
  • 1 tbsp olive oil
  • 1 cup milk
  • 6 tbsp flour
  • 2 tsp salt
  • 1 tsp pepper

Directions:

  1. In a large sauce pan, melt butter and add olive oil. The oil will keep the butter from turning brown and burning.
  2. Cut asparagus into approximately 1 lengths and add to pan.
  3. Add mushrooms.
  4. Saute until mushrooms are dark and asparagus is fork tender.
  5. Add flour to the milk and whisk until there are no lumps.
  6. Add the milk mixture and the salt and pepper to the pan.
  7. Cook until thick, stirring constantly.
