Colonel Sanders' Scalloped Tomatoes

Ingredients:

Directions:

  1. Saute 2 tablespoons minced fresh onions in 1/3 cup bacon fat in an iron skillet.
  2. Stir in 1/4 cup flour and brown lightly.
  3. Add 1/4 cup flour and saute until lightly browned.
  4. Mash enough fresh tomatoes with a potato masher to yield 3 cups.
  5. Add mashed tomatoes, black pepper and salt to saute mixture.
  6. Cook until flour has thickened tomatoes.
  7. Add 1 tablespoon sugar.
  8. Cook just long enough to dissolve sugar.
  9. Stir in cubed toast just until combined.
  10. Serve.
