This is my personal recipe for scalloped tomatoes, once served at my Corbin, Kentucky restaurant.
Ingredients:
1/3 cup bacon fat
2 tablespoons minced fresh onions
1/4 cup sifted flour
3 cups fresh tomatoes, mashed
1/2 teaspoon black pepper
1/2 teaspoon salt
1 tablespoon sugar
2 cups cubed toasted white bread
Directions:
1. Saute 2 tablespoons minced fresh onions in 1/3 cup bacon fat in an iron skillet.
2. Stir in 1/4 cup flour and brown lightly.
3. Add 1/4 cup flour and saute until lightly browned.
4. Mash enough fresh tomatoes with a potato masher to yield 3 cups.
5. Add mashed tomatoes, black pepper and salt to saute mixture.
6. Cook until flour has thickened tomatoes.
7. Add 1 tablespoon sugar.
8. Cook just long enough to dissolve sugar.
9. Stir in cubed toast just until combined.
10. Serve.
