Directions:

  1. Preheat oven to 400 degrees. Place 3 tablespoons of the olive oil in the bottom of a shallow baking pan and sprinkle with the tarragon. Place pan in oven just until tarragon begins to sizzle.
  2. Meanwhile mix 1 tablespoon olive oil, orange zest and orange juice in a small bowl; set aside.
  3. Remove pan from oven. Add shrimp and pour orange juice mixture over shrimp. Stir gently. Sprinkle with salt and pepper to taste.
  4. Return pan to oven and cook for 5-9 minutes; just until shrimp begin to turn pink/coral. Do Not Overcook! Serve in a shallow dish with lots of crusty bread to soak up juices.
