Ingredients:

Directions:

  1. Flatten breasts between sheets of wax paper using rolling pin.
  2. Mix cheese, crumbs, parsley and salt and pepper in large bowl.
  3. Whisk egg with milk in medium bowl.
  4. Dip chicken into egg, then into crumb mixture, coating completely, and pressing to adhere.
  5. Shake off excess.
  6. Heat oil in heavy, large skillet.
  7. Add chicken and cook until golden-brown, about 4 minutes per side.
  8. Transfer to paper towels to drain.
  9. Transfer chicken to platter.
  10. Melt the butter and whisk in the lemon juice to serve as a sauce. Garnish with extra lemon wedges.
