Baked Parmesan Fish

Ingredients:

  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 egg
  • 2 tbsp milk
  • 4 (4 oz) orange roughy fillets or 4 (4 oz) catfish fillets

Directions:

  1. In a shallow bowl combine the parmesan cheese, flour, paprika, salt and pepper.
  2. In another bowl beat the egg and milk.
  3. Dip fish fillets into egg mixture then coat with parmesan mixture.
  4. Arrange in a greased 13x9x2-inch baking dish.
  5. Bake uncovered at 350°F for 25-30 minutes or until fish flakes with a fork.
