Ingredients:

Directions:

  1. Preheat oven to 350 degrees F.
  2. For the crust: Mix the melted butter in a bowl along with the graham cracker crumbs.
  3. Press into the bottom of a 10-12 inch spring form pan.
  4. Bake for seven minutes, to set.
  5. For the filling: Cream together the softened cream cheese and sugar.
  6. Blend in the eggs and vanilla.
  7. Beat until smooth.
  8. Pour 1/2 of the mixture into the prepared pan.
  9. Evenly distribute the 1 1/2 cups of cubed peaches over the cheese mixture.
  10. Pour the remaining cheese mixture over the top.
  11. Bake for 30-35 minutes.
  12. For the topping: Place the remaining ingredients into a pan, except for the water and corn starch and optional marshmallows.
  13. Cook over medium heat, until it boils (stir frequently).
  14. Continue cooking over low to medium heat until it reduces by about 1/2.
  15. Mash the peach pieces and continue cooking for five more minutes.
  16. Mix the water and corn starch.
  17. Turn up the heat until boiling.
  18. Add the corn starch, slowly, until it reaches the thickness of catchup.
  19. Allow the catchup and cake to cool thoroughly.
  20. Generously spread the catchup on top of the cake and decorate with marshmallows, if desired.
