Cheddar And Bleu Cheese Drop Biscuits

Ingredients:

Directions:

  1. Preheat oven to 400, positioning one rack in bottom third and one rack in top third of oven.
  2. Butter and flour 2 large baking sheets.
  3. Whisk first 5 ingredients in large bowl to blend well. Add butter and cut in with pastry cutter until the mixture resembles coarse meal. Add both cheeses, continuing to use pastry cutter to blend.
  4. Blend buttermilk and egg in small bowl. Add to flour mixture, stirring until dough is evenly moistened.
  5. Using 1/3 cup dough for each biscuit, drop 6 mounds onto each prepared sheet, spacing 2-3 apart. Bake biscuits 10 minutes. Reverse positions of sheets. Bake biscuits until golden brown and tester inserted into center comes out clean, about 10 minutes longer. Serve warm.
  6. NOTE: You really don't need butter with these, they are so rich. But what the heck...butter makes EVERYTHING better!
