Carrot, Apple and Orange Coleslaw

Ingredients:

Directions:

  1. Place the carrot in a large serving bowl.
  2. Quarter the apples, remove the core and slice thinly. Sprinkle with lemon juice to stop discoloration then add to the carrots.
  3. Using a sharp knife, remove the peel and pith from the orange and then separate into segments. Add these to the carrot and apple mixture.
  4. To make the dressing, place all the ingredients in a jar with a tight fitting lid and shake vigorously to emulsify.
  5. Just before serving, pour the dressingover the salad and toss well.
