Caribbean Crabmeat Salad

Ingredients:

  • 1 (8 oz) can crabmeat
  • 1 red pepper , thinly sliced lengthwise
  • 2 tbsp lettuce
  • 1 tsp lime zest
  • 3 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1/2 tsp cumin
  • 1/2 tsp ginger
  • 1/4 tsp salt

Directions:

  1. Boil noodles til tender.
  2. Rinse in cold water.
  3. Put noodles, crabmeat,pepper, lettuce, in bowl and set aside.
  4. In a small bowl, whisk zest, lime juice, olive oil, honey, cumin ginger, and salt.
  5. Pour over salad and toss.
  6. Cool in fridge at least one hour before serving.
