Caramelized Onion-Flavored Rice

Ingredients:

  • 2 cups basmati rice
  • 2 cinnamon sticks
  • 6 whole cloves
  • 2 1/2 tsp salt

Directions:

  1. Rice rice well, cover with 3 inches of water and soak for up to 2 hours.
  2. Heat oil in a large saucepan.
  3. Add bay leaves, cinnamon and cloves.
  4. Saute until fragrant (about one minute).
  5. Stir in onions.
  6. Saute stirring frequently until caramelized (20 to 25 minutes).
  7. Reduce heat as onions begin to color.
  8. Add a spoonful of water to prevent burning if necessary.
  9. When the onions are caramelized, drain rice and add to onions.
  10. Mix well.
  11. Add 3 1/2 cups of water and salt.
  12. Cover and bring to a boil over high heat.
  13. Reduce heat to low, cover and cook for 25 minutes (without peeking).
  14. Remove from heat, leave lid ajar to allow steam to escape.
  15. Let rest for 5 minutes.
  16. Fluff and serve.
