Broccoli Soup

Ingredients:

  • 2 cups broccoli
  • 4 tbsp oleo or 4 tbsp butter
  • 1 cup onion
  • 3 tbsp flour
  • 1 cup cheese
  • 3 cups milk
  • 3 slices bacon
  • 1 tsp salt

Directions:

  1. Cook broccoli and chop and set aside. Cook bacon and crumble into pieces and set aside. If using Canadian Bacon cube into small pieces. Cube cheese and set aside.
  2. In a saucepan large enough to hold soup add oleo or butter melt and add flour and saute; do not brown. Add milk and cubed cheese and let cheese melt and then add broccoli; do not boil or will separate. Lastly add meat and salt and serve.
