This recipe was given to me by Elouise Squires. Elouise has since passed away but the legacy of her soup lives on at our home. You can add more vegetables ; like carrots or celery to this soup for a bolder soup. Ingredients:
2 cups broccoli |
4 tablespoons oleo or 4 tablespoons butter |
1 cup onion |
3 tablespoons flour |
1 cup cheese |
3 cups milk |
3 slices bacon or 4 -5 slices canadian bacon |
1 teaspoon salt |
Directions:
1. Cook broccoli and chop and set aside. Cook bacon and crumble into pieces and set aside. If using Canadian Bacon cube into small pieces. Cube cheese and set aside. 2. In a saucepan large enough to hold soup add oleo or butter melt and add flour and saute; do not brown. Add milk and cubed cheese and let cheese melt and then add broccoli; do not boil or will separate. Lastly add meat and salt and serve. |
