Ingredients:

  • 1 2/3 cups flour
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1 egg
  • 2/3 cup nonfat milk
  • 2 tbsp unflavored applesauce

Directions:

  1. Preheat over to 375 degrees F and grease muffin pan.
  2. Sift dry ingredients together.
  3. Beat egg and add applesauce and milk.
  4. Pour wet ingredients into dry and stir until there are no or VERY few lumps.
  5. Fold in blueberries.
  6. Spoon into muffin cups.
  7. Bake for 20-25 minutes.
