one of my grandmother's old recipes she found while i was visiting. I altered a few ingredients to make it healthier (and lower the calories!)
Ingredients:
1 2/3 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg
2/3 cup nonfat milk
2 tablespoons unflavored applesauce
1 cup blueberries
Directions:
1. preheat over to 375 degrees F and grease muffin pan.
2. sift dry ingredients together.
3. beat egg and add applesauce and milk.
4. pour wet ingredients into dry and stir until there are no or VERY few lumps.
5. fold in blueberries.
6. spoon into muffin cups.
7. bake for 20-25 minutes.
